About Us:
I have been in the culinary industry for over 42 years and have held positions from Line Cook to Executive Chef. After graduating from Le Cordon Bleu College of Culinary Arts-Scottsdale in 2011, I wanted to open a small bistro, but after doing a cost analysis, I found it to be less expensive to operate a food truck and be able to drive to where the festtivals were instead of waiting for people to show up. For the next few years, I did my research, created a 5 year business plan and shopped for funding options.

Once my wife died suddenly last year, I wanted to fulfill our dream of owning a food truck and I had one custom built by prime Design in Tempe. I took possession of it in October 2023 and after licensing, we did our first event in March!

My love for cooking began as a child of 4 when I made my first official dish- spaghetti -well with mom's help. I rolled out my first chapati/roti a few weeks later. My mother happened to be a chef working in some of the best five-star restaurants around. My food is not only inspired by her but by a long family legacy. A legacy of cooking one would say with the mind of a Natural Path, which was borne by our great great great grandparents. Most notably our renowned great Grand Father who trained with the best natural paths during the early 1900's; to enhance the family's knowledge base which was derived from over 250 years of prior history. I started the food truck business in Dallas, TX, about 7 years ago. I wanted to give the community a little taste of Louisiana because I was missing the flavors that I was use to back home. I started getting more exposure, I've competed in tasting Championships, which we have won several 1st prizes for the Best tasting Gumbo.

Rocky Mountain Wraps survived and prospered through the COVID Pandemic because of the high standards of safety for our staff, our patrons and ourselves, while serving and expanding our quality products without skipping a beat!
