After 6 months of running the pop-up restaurant with long lines, the team took the courage and opened their first mobile food truck in April 2020 in a thriving Urban are in Houston, Texas. Demand for their crave-able hot fried chicken exceeded all expectations and sales have grown every month since opening with consistently great quality food and awesome experience. I decided to start a restaurant business because of my passion for cooking and the joy of bringing people together through food. I wanted to create a space where guests could enjoy unique flavors and experiences, while also fostering a community atmosphere. Additionally, the opportunity to express my creativity and build a brand around something I love was incredibly motivating.

My deceased grandmother called me Sunshine I started this business as a way to keep a legacy of good food going after my grandmother passed away in 2019. She loved to cook and taught me everything I know. She would say, "Good food is the universal love language that can bring people from all over together if it's cooked with love". Oftentimes, the moments that seem inconsequential can unexpectedly shape the course of your life. This is what I learned on my path to opening Egg Stand.
I did not realize it at the time, but it all started in my teenage years. My parents owned a deli in Long Beach, NY where I spent many afternoons helping out in the kitchen. As an adult, I never expected to get into the food industry. I gravitated towards the corporate world instead, working in sales for a commercial construction company for over 15 years.
Food, however, was never entirely off my radar. I traveled frequently for my job, giving me the opportunity to explore the food scene in many major cities. On one trip, I found myself taken by a particular cart in Los Angeles’s Grand Central Market that specialized in egg sandwiches. I was charmed by the concept, and my memory of the company never quite faded. Years later, that memory became instrumental.
At 57, my life changed dramatically. I was suddenly laid off and found myself at a standstill. I was in the same position of many who become unemployed late in their careers. Given my decades of experience, I was overqualified for most open positions. After three months of sending out applications to no avail, I decided to spend a weekend in Vegas to take my mind off things. Upon reaching my hotel’s lobby, I saw something that astounded me.
It was the same egg sandwich cart I encountered in LA, and apparently the business had grown exponentially. There must have been 300 people waiting in line. I spent hours just watching the commotion, talking to the customers, and trying to decipher how the concept took off. After returning to my hotel room, I spent all night jotting down the notes that became the skeletal model of Egg Stand’s business plan. After returning to Dallas, I used a chunk of my severance package to open up my own food truck.
We started off small. Despite the lack of advertising, we grew fast. Our popularity was totally organic. News of Egg Stand spread via word-of-mouth and, before long, we found ourselves landing in some of the most popular food truck spaces in the city.
We’re still going strong today, serving our made-to-order egg sandwiches to residents throughout Dallas. If you eat here, prepare to rethink everything you thought you knew about the egg. We’re proof this versatile food need not be relegated to the breakfast menu. Our egg-based sandwiches are well-suited for lunch, dinner, or really any time of day. It all started with a dream, as a kid i wanted to one day own a restaurant and come up with different ideas that were just a little different from the normal options. thinking that was never going to happen, I become a truck driver. until one day I got sick and lost my CDL. having to come up with an option to take care of my family we bought out a family member who had a restaurant in historic downtown Sanger, TX, On aug 4th, 2023 we opened Bear's Cafein a 2100 Square foot restaurant space. As all new businesses do we had our struggles from a city wide rolling black out 6 weeks after grand opening taking our all the cooling equipment to employees that couldn't do the job correctly to a small town looking at us as outsiders and not wanting to support. we pushed through and eventually we found the key to it all the marketing was working, we won over a lot of that community. at the beginning of 2024 we started getting asked to do large catering jobs and unfortually we as a team of 3 could not be in 2 places at 1 time, with our lease being up in may we weighted out the options stay in Sanger or move to food trailer and go on the adventure of large events. we then made the choice to switch over to a food trailer and close out sanger. we have enjoyed the people that we have had the pleasure to meet and do business with both in Brick n mortar and in our food truck. we are not your average food choice but we put love in everything we do, from our brisket to our burgers to our signature dish the Brisket egg roll. this business name has so much meaning to us as the name sake to my wife's grandfather's restaurant business in Indiana (big Bear)to several dogs including my service dog(bear) the name a lone means the world to me and my family as well as so much love.
